Ingredients: 1 loaf of stale bread (I use Challah or a baguette) – $2.49 8 large eggs, lightly beaten – stock 2 cups of buttermilk (click here for buttermilk substitute) – stock ½-cup applesauce – $2.19 ½-cup sugar – stock 2 Tablespoons pure vanilla extract – stock Streusel Topping: ¼-cup whole wheat flour – stock ½-cup firmly packed light brown sugar – stock ½-cup old fashioned rolled oats – stock 1 teaspoon ground cinnamon – stock ½-teaspoon salt – stock 6 Tablespoons cold butter, cubed – stock Grand total assuming a “well-stocked” kitchen: $4.68 Cost per serving: $0.78 Directions: 1. Grease a 9×13-inch pan. 2. Tear the bread into chunks and arrange in the greased pan. 3. In a large bowl, combine the eggs, buttermilk, applesauce, sugar and vanilla. Pour the mixture over the torn bread, cover with saran wrap and refrigerate over night. 4. Prepare the Streusel Topping: in another bowl, combine the flour, brown sugar, oats, cinnamon, salt and cubed butter. Work into a crumble – using your fingertips – until everything comes together like little pebbles. Store in a plastic bag in the fridge. 5. When ready to bake the French Toast, preheat the oven to 350 degrees. 6. Remove the pan with the soaked bread from the fridge and sprinkle the streusel crumbles over top. 7. Bake for 50-60 minutes and serve hot/warm.
