Mariel here. I’ll keep this one short and sweet, in part because cookies really sell themselves. I intended to make classic White Chocolate Macadamia Cookies for our playgroup cookie exchange, but my local grocery store loves to keep us guessing when it comes to what they stock their shelves with. So sadly, there was nary a macadamia on the shelves. Cashews subbed in beautifully though, adding that perfect touch of salt and a satisfying crunch to offset the chewiness of the cookie. I highly recommend leaving a plate of these for Santa… In fact, our own resident Santa has already eaten all of the frozen leftovers I was saving for his December 24th debut. Perfect.

White Chocolate and Salted Cashew Cookies Gently adapted from Allrecipes.com Makes 3 dozen
Ingredients: 2 cups all-purpose flour – stock 1 teaspoon baking soda – stock ¼ teaspoon salt – stock ¾ cup butter, softened – stock ½-cup and 1 Tablespoon packed light brown sugar – stock ¼-cup and 2 Tablespoons white sugar – stock 2 eggs – stock ¼ teaspoon vanilla extract – stock ¼ teaspoon almond extract – $4.99 ¾ cup roasted & salted cashews, crumbled by hand – $5.99 ¾ cup white chocolate morsels – $2.39 Grand total assuming “well-stocked” kitchen: $13.37 Cost per cookie: $0.37 Directions: 1. Preheat oven to 350 degrees 2. Whisk together the flour, baking soda and salt in a small bowl. Set aside. 3. In the bowl of an electric mixer, cream the butter and sugars until smooth. Beat in the eggs, one at time, until just combined. Stir in the vanilla and almond extracts. 4. Using a wooden spoon, add the flour mixture slowly until just incorporated. Then fold in the cashews and white chocolate morsels. 5. Drop dough by the teaspoonfuls onto ungreased cookie sheets. 6. Bake for 8-10 minutes, or until the bottoms are just starting to look golden around the edges. Cool on wire racks.
